Cooking problems: Your food problems are solved

When I write my own recipes, my preferred method is to start with a base amount of salt, just to make sure things are more or less seasoned to an acceptable amount, and then include “salt to taste” in the directions so people who make the recipe at home, can add additional salt as needed, according to their own preferences.

And a reminder: When a recipe tells you to “taste and adjust for seasoning,” they mean it! Every time. Taste whatever you’re making, add a pinch of salt if it needs it, and move on. Your food will taste so much better when you actually take the time to taste it several times and at different parts of the cooking process.
